What's Brewing: July 1, 2017 Edition

july4th_words_fireworks.jpgHappy Independence Day! Or, shall we say, Happy Blow Stuff Up Day! Seriously, who doesn't like to blow stuff up? But before we wax pyro here, we have important things to tell you. The store will be open regular hours over the weekend so plan to come in for your holiday weekend must-haves. We've got tasty locally-made brats and pretzel rolls to fill your grill, a fun and funky beer selection to fill your fridge and, as usual, we have all your home beer and wine making supplies so you can fill your extra days off with your favorite hobby. And CO2! Don't forget to have enough on hand to get you through your cook-outs, get-togethers, pool parties, happy hours, or whatever else you have planned. 

So to recap, the storefront in Falls Church will be open Saturday 10 am. to 6 pm., Sunday Noon to 4 pm. and will be closed on Monday, July 3 (as usual) and closed on Tuesday, July 4. The web store will be open 24/7, as it always is.

Get to Know LupuLN2,Cryo Hops
As the name implies, YCH Hops uses cryogenic technology to produce Cryo Hops. They separate whole hop cones into concentrated lupulin hop powder and low-alpha bract via exposure to extremely low temperatures in a nitrogen-rich production atmosphere, eliminating opportunities for oxidation.  LupuLN2 is the concentrated lupulin glands of whole hop cones containing sensitive resins and aromatic oils. LupuLN2 hop pellets offer twice the resin content of traditional T90 pellets and should be dosed at half the weight - the perfect addition for any juicy and resinous, hop-forward recipe.

Using LupuLN2 Cryo Hops
  • KETTLE: Late additions only; early kettle additions should be avoided to prevent boiling out the intense aroma characteristics.
  • WHIRLPOOL: Whirlpool additions are an excellent way to increase aroma and reduce trub-load from large, late additions.
  • KNOCKOUT OR HOPBACK: Due to fine particle size, there is low risk of clogging heat exchangers. This allows for extremely late additions, even with carryover into the fermenter. 
  • FERMENTER: Use in the fermenter is an excellent way to increase aroma while reducing trub-loss. LupuLN2 will settle out during normal conditioning and can be fined, filtered or centrifuged as normal.
Recipe Adaptation
Regardless of application, early trials indicate LupuLN2 beers showcase pronounced juicy and resinous flavors with reduced grassy characteristics. As a result, some brewers recommend using LupuLN2 in conjunction with T90 pellets to ensure the complexity and flavors of the whole hop cone are retained. Creating new recipes with LupuLN2 is an excellent (and safe) way to showcase hops in innovative beers and styles. As a starting point for recipe formulation or modification, the estimated dosing rate of LupuLN2 is 40-50% of hop pellets by weight.

Our "Slightly Hazy" IPA is in the Northeast vein; more juicy/fruity hop flavor than bitterness yet enough to make this beer dry and refreshing. Top quality dry yeast is included but if you prefer liquid cultures we recommend Wyeast 1318 London Ale III (don't forget to protect your liquid yeast during warm periods with an ice pack).

Winexpert Eclipse Limited Release Nocturnal
Nocturnal is a classic blend with an unusual moonlit twist. The grapes were plucked from the vines in the cool of the night when sugar levels are more stable and acid levels are better. This results in a wine with richer flavor and aromatics. Grenache, Syrah, Mourvèdre and Cinsault deliver complex spicy aromas with fruity plum and black raspberry on the palate, balanced with earthy woodsmoke. The full body and lush tannins make the finish just long enough to savor all the nuances in this gorgeous wine. Now taking pre-orders. ETA: mid-July.
